Sausage and mash is a favourite family dish which is quick and easy to make, and also makes a cheap yet very substantial meal. The heart warming recipe makes the perfect comfort food and can be enjoyed any day of the week.
Serves 4
Ingredients
2 tbsp olive oil or sunflower oil
8 premium pork Wicks Manor sausages
For the mash
900g washed and peeled Maris Piper potatoes
100ml milk
100g unsalted butter, cubed
salt and pepper to season
For the onion gravy
4 white onions
2 sprigs of fresh sage, finely sliced
1 cube of unsaltedbutter
225ml white wine
250ml stock of your choice ( beef, chicken or vegetable)
1 tbsp vegetable oil
Method
1.) Cook the potatoes in a large pan of lightly salted water and bring over a medium heat for around 20 minutes or until soft.
2.) Drain the potatoes in a colander then put back them back in to the pan and mash well.
3.) When the potatoes are smooth, add in the butter and milk and season.
4.) Mash until fluffy, adding a splash of milk if the potatoes are too thick.
5.) Meanwhile, place the sausages under the grill for 15 minutes, turning, until cooked and piping hot.
For the onion gravy:
1.) Peel the onions and slice finely. Gently fry the onions in a pan on a low-medium heat with the butter and a splash of oil and cook slowly for around 30 minutes.
2.) Add half of the white wine in, then add in the sage and stock. Simmer on a low heat and adjust the taste with salt and pepper.
